idea: Healthy Bakery - Organic, nutritional and low-fat baked goods

Offer low fat baked goods such as cookies, muffins, etc... to working professionals in an easy to grab package at their local coffee shops or convenience stores. Goods would be fresh (within 2 days) and snackable throughout the day (3-5 smaller servings).
Potential Issues:
Capital intensive to start... Need to get buyoff from stores such as Starbucks (who has their own line of baked goods), Peets (ditto) and convenience stores. Alternatively, need to find an alternate distribution method. - Bakery cart?
